Leicestershire-based baker Fiona Cairns, who prepared an eight-tiered wedding cake for the Duke and Duchess of Cambridge, shares some of the tricks of her trade. She begins by demonstrating how to create the perfect treats for a tea party, including heart-shaped vanilla shortbreads, fairy cakes in lavender sugar, a rose-petal heart with white chocolate and a lemon Madeira cake.
2. Episode 2
Baker Fiona Cairns demonstrates four treats featuring summer berries. On the menu are blueberry yoghurt fairy cakes with a cream cheese topping, a berry rose-scented meringue, a flourless chocolate cake with raspberry coulis, and a strawberry and elderflower cake. She also visits a pick-your-own-fruit farm in Leicestershire and teaches novice bakers how to make the perfect Victoria sponge.

Baker Fiona Cairns demonstrates sweet treats inspired by garden vegetables. On the menu are hidden fruit and vegetable muffins, a moist honey cake, a chocolate and beetroot cake and a vegetable plot cake made from carrot and pecan nuts. She also visits a beekeeper to buy top-quality honey and shows three gardeners how to make miniature vegetable cake decorations from sugar paste.

Baker Fiona Cairns demonstrates how to make birthday treats for all ages. On the menu are easy gingerbread biscuits, a sticky toffee pudding birthday cake, sponge cakes shaped like ice-cream cones topped with peanut butter and salted caramel, and her most popular chocolate cake. She also shows two teenagers how to prepare and pipe flawless buttercream icing.

Baker Fiona Cairns offers the perfect recipes for a Halloween party. On the menu are peanut and caramel cookies, toffee apple pops filled with buttercream, orange-flavoured cupcakes with sugarpaste monsters, and an erupting volcano marble cake. Plus, she teaches two bakers how to make bats and ghosts using chocolate shortbread.

Fiona Cairns bakes Indian treats, including chilli chocolate cupcakes, a chewy tropical fruit meringue and a cake decorated with vanilla rose butter cream. She also gives a traditional British ginger cake a twist with a hint of Masala Chai tea.
